Although few of us are Italian, giving up pizza when going on a low carb diet is like shattering our soul. Luckily though, in low carb pizza there is hope!

As I currently have a little time, I was browsing on the internet last week. Looking for fresh, stirring ideas, inspirational dishes that I’ve never tried before, to delight my loved ones with. Looking for a long time unfortunately could not discover any interesting things. Just before I wanted to give up on it, I found this scrumptious and simple dessert simply by chance. The dessert seemed so tempting

on its photo, that required quick actions.

It had been not difficult to imagine just how it’s created, how it tastes and just how much my hubby is going to want it. Mind you, it is rather easy to keep happy the man in terms of desserts. Anyhow, I went to the page: Suncakemom and then used the simple instuctions that were accompanied by great snap shots of the procedure. It just makes life quite easy. I can suppose it is a slight inconvenience to shoot snap shots in the midst of baking in the kitchen as you normally have gross hands so I genuinely appreciate the time and energy she put in to make this post .

I had been fine tuning the main mixture create it for the taste of my loved ones. I must say it was an awesome success. They prized the taste, the structure and enjoyed having a treat like this in the midst of a hectic workweek. They basically wanted even more, many more. Thus next time I’m not going to commit the same miscalculation. I am likely to twin the quantity to keep them delighted.

Preheat the oven to 350°F / 180°C.

Measure the mozzarella and the cream cheese into a bowl.

Put them into the microwave until they melt together for about 90 seconds on maximum power. Halfway through take the bowl out and stir them around a bit.(In case of missing microwave warm them over hot water, similarly to chocolate)

While the Cheese melts beat up the eggs quickly.

Mix in the Coconut flour.

Mix the melted cheese in, too. This is going to be a bit tough. As the cheese cools off, it’s going to be even harder. Luckily, we can put the whole thing back to the microwave for a couple of seconds to reheat it if necessary.

Mix until our dough becomes even consistency.

Cut out a pizza size circle shape from parchment paper and put the dough in the middle of the parchment paper.

Place another parchment paper on top. This doesn’t need to be circle shaped.

Spread out the dough to the size of the circle shaped parchment paper.

Take the top parchment paper off.

Correct any mistakes on our future crust.

Place the low-carb pizza dough into a 350°F / 180°C preheated oven for 15 – 25 minutes.
